Recipe-1 CORNISH PASTIES

NOTES & ABBREVIATIONS  

•  lb = pound (weight)
• 1 kilo = 2.2 lbs
• oz = ounce
• 100 grams = 4 ozs
• 3/4 lb = 12 ozs
• tbsp. = tablespoon
• seasoning = salt & pepper

SHORTCRUST PASTRY

INGREDIENTS

• 8 oz flour
• 4 oz of margarine
• A pinch of salt
• Cold water to mix

METHOD

1. Sieve the dry ingredients into a mixing bowl;  this aerates the flour and lightens the finished pastry.

2. Rub in the margarine very lightly, using your fingertips only.  

3. Mix rubbed-in ingredients with the cold water, gently using a knife.  In hot weather, iced water may be used.

4. Add only just enough water to make the pastry bind together and finish the mixing with your fingers.

5. Store in the refrigerator until required.

PREPARING THE FILLING

INGREDIENTS

• 6 oz of raw potatoes

• 3/4 lb. lean raw steak, or mutton

• 1 tbsp. chopped onion

• Salt & Pepper

• 2-3 tbsp. cold water

METHOD

1. Wash & peel the potatoes.

2. Dice the potatoes.

3. Dice the onion.

4. Cut up the meat, or mince

5. Mix together the potatoes, meat, onion, seasoning & water

CREATING THE CORNISH PASTIES

INGREDIENT

• 1 lb. of shortcrust pastry

• Egg yolk, or milk

METHOD

1. Roll out the pastry thinly and cut into rounds. (approximately the size of a saucer)

2. Put 1 tbsp. meat mixture on each round.

3. Wet the edges of the pastry round.

4. Fold the pastry round in half and seal the edges.

5. Stand the pastie on a baking sheet, so the sealed seam is on top.

6. Brush over with beaten egg, or milk.

COOKING INSTRUCTIONS

• Bake in a moderately hot oven (220 degrees Centigrade, 420 degrees Fahrenheit, or gas mark 7) until the pastry begins to brown

• Then reduce the oven to (170 degrees C, 350 degrees F, or gas mark 3)

• Cook until meat is tender. (Approximately 1 hour)
